Light soft and chewy on the inside. Ingredients:
8 ounces coconut |
10 ounces sugar |
5 egg whites |
1 cup rice flour |
Directions:
1. Mix coconut, sugar and egg whites together in a saucepan. 2. Heat gently, stirring with a wooden spoon until the mixture is warm but NOT hot. 3. Remove from heat and leave until cold. 4. Divide mixture into 28 mounds, setting them down on a Silpat pan liner. 5. Bake 20 minutes at 350F until pale golden brown. 6. Cool on a wire rack. |
