1/2 cup butter |
1/2 cup sugar |
2 eggs |
1 1/2 cups self-rising flour |
1/4 cup flaked coconut, small flakes |
2 tablespoons milk |
Directions:
1. Cream the butter and sugar together until light and fluffy. 2. Beat in eggs one at a time, adding a little flour with the second. 3. Fold in remaining flour, coconut, and milk. 4. Turn into a greased and floured loaf tin. Bake in a preheated oven at 350 degrees for 60-75 minutes. |
