Coconut Lime White Chocolate Cookies |

I just found this recipe on the internet and wanted to add it too my cookbook,sounds so delicious! Ingredients:
1/2 cup real butter |
6 tablespoons granulated sugar |
6 tablespoons light brown sugar |
1 large egg (beaten lightly) |
1 lime, juice and zest of |
1 cup flour |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
0.5 (10 ounce) bag white chocolate chips |
14 ounces sweetened coconut |
Directions:
1. Preheat oven 375 degrees. 2. Soften butter before starting the batter. 3. Add the sugars and the beaten egg. 4. Mix with a spoon not a electric beater. 5. Grate the peel of the lime very finely into the batter. 6. Add 1/2 to 3/4 tsp lime juice. 7. Mix in the dry ingredients. 8. Batter should be stiff,if it isn't you could chill the batter or add 2 Tbsp more flour. 9. Add white chocolate chips and 1/2 bag of coconut. 10. Place the rest of the coconut in a flat dish. 11. Roll the dough into small balls then roll each ball in the extra coconut. 12. Place on ungreased cookie sheet and bake for 10 minutes. 13. The coconut should look toasted and the cookie firm if not bake for an additional 2-3 minutes. |
