Coconut Lime Thai Snowballs |

This recipe was in the local paper. These are very rich and a fun change. Ingredients:
1 cup unsalted butter, softened |

1 cup confectioners' sugar |
1 teaspoon pure lime oil (or 2 t. lime juice) |
1 1/2 teaspoons finely grated lime zest |
1/4 teaspoon salt |
2 cups all-purpose flour |
1 cup unsweetened dried shredded coconut |
1 cup unsweeteded shredded coconut |
1 cup confectioners' sugar, sifted |
1 1/2 teaspoons finely grated lime zest |
2 tablespoons cornstarch, sifted |
Directions:
1. Preheat oven to 350 with racks in the upper and lower thirds. 2. Combine butter and sugar and beat until light and fluffy. 3. Add lime oil; beat to combine. 4. Gently fold in lime zest, salt, flour and coconut. Blend well. 5. Lightly flour hands and roll dough into small,about 1-inch, balls and place about 1 1/2 apart on an ungreased baking sheet. 6. Bake until puffy (not browned)and bottoms are just golden, about 15 minute. 7. Meanwhile, combine coating ingredients in a gallon size plastic bag. While cookies are still warm, toss them in the coating. 8. Remove and transfer to wire rack to cool completely. |
