I was just wanting to try to make something new and this is what I threw together. You can't taste the spinach AT ALL. Tastes very limey - add coconut milk if you have it to balance it out if you want. -What's great about this pairing is that the ascorbic acid, the vitamin C, in the limes helps the body absorb the iron found in the spinach. Without vitamin C mixed with the spinach, the human body only takes 20% of the available iron in the spinach! Drink up! Ingredients:
2 -3 cups fresh spinach leaves |
3 tablespoons unsweetened dried shredded coconut |
1 young fresh coconut, still in white husk |
2 limes, peeled |
3 tablespoons cream (optional) |
1 teaspoon raw honey (optional) |
Directions:
1. Cut open the coconut. 2. Drain the coconut water into a blender. 3. Scoop the coconut jelly (young flesh) out of the coconut and into the blender. 4. Add spinach leaves and the rest of the ingredients. 5. Blend and enjoy! |
