6 1/4 cups coconut milk |
1 1/2 cups sugar |
1/4 teaspoon salt |
2 1/4 cups rice flour |
3/4 cup cornflour |
3/4 teaspoon red food coloring |
Directions:
1. Pour coconut milk into saucepan; warm over low heat. Add sugar and salt; stir until dissolved. Stir in rice flour and corn flour; mix well. Filter batter through a fine strainer. Divide mixture into 2 equal portions. Add red food coloring to one portion. Pour mixture into greased, heated tin to steam into 9 layers of alternating colors, starting with a red layer. Allow 10-15 minutes cooking time per layer. Leave to cool. Cut in diamond shaped pieces. |
