1. In a saucepan bring the coconut and water to a boil. Add the brown sugar and stir well. Cook on low for about 30 minutes. Stir occasionally. 2. When the mixture begins to harden add the vanilla and stir well. Cook another few minutes until it gets very sticky. 3. Drop by tablespoons onto a greased cookie sheet. Let the candy cool completely. This recipe makes approximately 15 pieces.
