Coconut Island Chip Cookies |

Found this in a cook book and added a few things, We love these, they are a little different but worth the try Ingredients:
1-2/3 cup flour |
3/4 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp salt |
3/4 cup butter softened ( i used can't believe it's not butter baking butter) |
3/4 cup packed brown sugar |
1/3 cup sugar |
1 tsp almond extract |
1/2 tsp coconut extract |
1 egg |
1 (11.5 oz) milk chocolate morsels |
1 (8 oz) mauna loa hershey macadania nut/white chips |
1 cup flaked coconut |
Directions:
1. Preheat oven to 375 2. Combine flour, baking powder, baking soda and salt in small bowl 3. In large bowl, beat butter, brown sugar, sugar and extracts till creamy 4. Beat egg in 5. Gradually add flour mixture till well blended 6. Stir in morsels, coconut, and nut/chip mixture 7. Drop by slightyly rounded tablespoon onto ungreased cookie sheets 8. Bake 8-12 minutes until edges are lightly browned 9. Remove and cool on pans for 2 minutes then remove to 10. cooling racks to cool completely 11. Makes 4 dozen |
