Ingredients:
3 eggs, lightly beaten |
1 cup sugar |
1/2 cup firmly packed brown sugar |
1 1/2 cups shortening, melted |
4 cups grated coconut |
5 1/2 cups sifted cake flour |
1 tablespoon baking powder |
1/4 teaspoon salt |
Directions:
1. Combine eggs, sugar, shortening, and coconut in a large mixing bowl; mix well. 2. Sift together flour, baking powder, and salt. Add to egg mixture, stirring well. 3. Press dough into a waxed paper-lined 8-inch square baking pan; cover and refrigerate overnight. 4. Turn dough out of pan, and remove waxed paper. Slice dough in half, forming two 8- x 4-inch rectangles. Cut each portion crosswise into 1/4-inch slices. Place on ungreased cookie sheets; bake at 400° for 10 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks. |
