This is one of the first things that my Mom taught me how to make, and I still make them today - and still just as delicious as ever!! The only difference was years ago I made them with raisins, now I make them with dried cranberries - so good!! Ingredients:
8 ounces bittersweet chocolate |
1 cup sweetened flaked coconut, toasted |
1/4 cup dried cranberries |
Directions:
1. Line a baking sheet with parchment paper. 2. Melt the chocolate in a double boiler just until melted, but not hot. Remove from heat and stir until smooth. Stir in the coconut and cranberries. 3. Using two small spoons, a small ice-cream scoop, or you fingers, form the chocolate and coconut mixture into mounds about 1 1/2 tall (about 1 tablespoons each) and place them on the prepared baking sheet about 1 1/2 inches apart. Refrigerate until set, about 1 hour. |
