Mango,Banana,Strawberries and Pineapple with a coconut milk dressing. Ingredients:
3 apricots (pitted and sliced) |
1 cup strawberry (quartered) |
1 cup kiwi (peeled, sliced) |
1 cup pineapple (chunks) |
1 banana (sliced) |
1 cup mango (peeled-chunked) |
1/4 cup coconut milk |
1 tablespoon orange juice |
1 tablespoon honey |
3 tablespoons coconut (shredded) |
Directions:
1. Combine fresh fruit (except banana) in a medium sized bowl, toss to combine chill 1 hour. 2. Add banana and pour prepared dressing over, toss gently. 3. Serve on lettuce bed. |
