Coconut Flour Banana Almond Muffins |

Title says it all. A lower-carb breakfast muffin that is gluten -free. Use over ripe bananas. Ingredients:
6 egg |
2 medium banana |
4 tbsp all-vegetable shortening |
1/4 cup honey |
1/4 cup coconut milk |
2 tsp pure vanilla extract |
1/2 tsp baking powder |
1/4 tsp real salt |
1/2 cup coconut flour |
1/2 cup chopped almonds |
Directions:
1. Preheat oven to 350 2. Use your electric beater to thoroughly blend all ingredients EXCEPT the coconut flour. Sift the coconut flour into the blended mixture then fold in the chopped almonds. 3.
