Another favorite from the Betty Crocker 1969 cookbook. This was actually listed as a variation to the Pecan Fingers, but I prefer the variation over the original! Delicious cookies with a crisp crust, chewy top, and a citrusy glaze. Read more . Yum! Ingredients:

3/4 c. shortening (half butter or margarine, softened) |
3/4 c. confectioner's sugar |
1 1/2 c. flour |
2 eggs |
1 c. brown sugar, packed |
2 tbsp. flour |
1/2 tsp. baking powder |
1/2 tsp. salt |
1/2 tsp. vanilla |
1/2 c. walnuts |
1/2 c. coconut |
orange-lemon icing |
1 1/2 c. confectioner's sugar |
2 tbsp. butter or margarine, melted |
3 tbsp. orange juice |
1 tsp. lemon juice |
Directions:
1. Cookies: 2. Preheat oven to 350 degrees F. 3. Cream shortening and confectioner's sugar. Blend in 1 1/2 c. flour. Press evenly in bottom of ungreased baking pan, 13 x 9 x 2 inches. Bake 12 - 15 min. 4. Mix remaining ingredients (except glaze ingredients), spread over hot baked layer and bake 20 min. longer. While warm, spread with Orange-Lemon Icing. Cool; cut into bars, about 3 x 1 inch. 5. Orange-Lemon Icing: 6. Mix icing ingredients until smooth and of spreading consistency. |
