My Mom shared this recipe with me many years ago. I make this pie for special holidays such as Thanksgiving, Christmas and most importantly for my father’s birthday. You see this was his favorite pie. I always made two of them so he could hide one just for himself. Ingredients:
5 eggs |
1 1/2 cup whole milk |
1 cup heavy cream |
1/4 teaspoon salt |
3/4 cup sugar |
1 tablespoon corn starch |
1 cup coconut |
1 purchased pie shell |
Directions:
1. Mix all ingredients except pie shell in blender. Pour mixture into pie shell. Bake 350 for 35 to 45 minutes or until inserted knife comes out clean. |
