For Quorn chicken or for real meat, this is quick easy and damn tasty. Ingredients:
1 tablespoon oil |
1 medium onion, sliced |
2 garlic cloves |
1/2 tablespoon ginger, fresh, finely chopped |
1/2 tablespoon coriander |
1 teaspoon cumin |
1 teaspoon turmeric |
1/4 teaspoon cayenne |
2 tablespoons coconut milk powder |
1/2 pint water, boiling |
Directions:
1. Heat the oil and fry off the onion until light brown, then add the ginger and fry further 2 minutes, now add the garlic and spices and fry for a further minute, do not let spices burn, now add the made up coconut milk and cook sauce out (reduce it) for 10 - 15 minutes. Pour over grilled chicken and enjoy. 2. If your using quorn chicken pieces, add at the same time as the coconut milk. add 1 ounce toasted almonds if wished before serving. |
