My Mom used to makes this pie for my husband often...its his favorite Ingredients:
1 9 pastry shell (can use a graham crumb crust) |
3t apricot jam (optional) |
3/4c sugar |
5t flour |
1/4tsp salt |
2c milk, warmed |
3 egg yolks or 2 whole eggs |
2t butter |
11/2tsp vanilla |
11/2c coconut, toasted |
Directions:
1. Spread jam over bottom of pie shell, set aside. 2. In a large microwavable bowl whisk together the sugar, flour and salt. Whisk together eggs and milk in a small bowl; gradually add to dry ingredients, whisking away all lumps. 3. Microwave on high untill filling thickens; stir and scrape down sides of bowl a few times. 4. When thickened add the butter, vanilla and about 1cup of the coconut. Cool slightly then pour into prepared pie shell. Cover and chill. 5. To serve top with sweetened cream and remaining coconut |
