For all the coconut lovers. Ingredients:
1 c. sugar |
2 c. milk |
1/3 c. flour and cornstarch, mixed |
1 tbsp. butter |
1/8 tsp. salt |
3 egg yolks |
1 c. bakers coconut |
Directions:
1. In top of double boiler add milk blended with dry ingredients. 2. Cook until it begins to thicken. 3. Add well beaten egg yolks, coconut and butter. 4. When custard consistency, remove from fire and pour into 9 inch baked pie shell. 5. Top with meringue made from the 3 egg whites and 3 rounded teaspoons sugar, beaten until it peaks. |
