Coconut Cream Pie that makes it's own crust. It is simple and has been in my family for generations. Ingredients:
4 large eggs |
1/2 cup self rising flour |
1 3/4 cups sugar |
1/4 cup butter, melted (not margarine) |
1 teaspoon vanilla |
2 cups half-and-half |
1 (6 -7 ounce) package coconut |
Directions:
1. Beat eggs and add in half and half and vanilla. Beat well. Add in flour, sugar, butter one at a time and beat well after each addition. Fold in coconut. Pour into 2 pie pans. Bake at 350 for 30 minutes or until golden. This pie makes it’s own crust. |
