A really moist coconut cookie with a bit of chocolate. Ingredients:
3 pkg. 7 oz. flaked coconut (7 2/3 c) |
1 c. flour |
1/2 t. salt |
1 can sweetened condensed milk |
2/3 c. canned cream of coconut |
1 t. vanilla |
1/4 t. almond extract |
1 lg. egg |
1 pkg. chocolate chips - 1 t. veg oil |
Directions:
1. Line Cookie sheet with Aluminum foil. 2. Sprinkle 1 C. coconut over foil, and bake 5-7 minutes, until golden brown. 3. Mix toasted coconut, remaining coconut, flour and salt. 4. Beat milk, cream of coconut, vanilla, almond, and egg in Medium bowl. Stir milk mixture in with coconut mixture until well blended. 5. Drop by rounded teaspoonfuls onto sheet. Bake 12-14 minutes, until light brown. 6. Heat chocolate chips and 1 T. oil over low heat. Drizzle over cookies. |
