A few liberties have been taken here with the traditional recipe ! Ingredients:
1 cup plain flour |
1 cup yellow cornmeal |
2 tablespoons sugar |
1 tablespoon baking powder |
1 teaspoon salt |
1 teaspoon cinnamon |
2 eggs |
1 cup milk |
90 g butter, melted |
1 cup coconut |
Directions:
1. Sift flour, cornmeal, sugar, baking powder, salt and cinnamon together in a large bowl. 2. Break eggs into a smaller bowl, add milk and melted butter. 3. Add coconut and stir till well combined. 4. Make a hole in the centre of flour. 5. Pour in milk/coconut mixture. 6. Stir till just combined. 7. Grease a shallow 20 cms square tin. 8. Spoon in the batter. 9. Bake at 200 C for about 35 minutes. 10. Cool on wire rack and cut into 9 large squares. 11. Serve with butter and jam. |
