This quick and easy rice recipe features instant rice flavored with coconut milk, lime and cilantro. Ingredients:
1 2/3 cups water |
1/3 cup light coconut milk |
1/2 teaspoon salt |
2 cups uncooked instant rice |
1/4 teaspoon grated lime rind |
1 tablespoon fresh lime juice (1/2 lime) |
1/4 cup chopped fresh cilantro |
Directions:
1. Combine first 3 ingredients in a saucepan; bring to a boil over medium-high heat. Add rice. Cover and let stand 5 minutes or until rice is tender. Stir in lime rind, juice, and cilantro. |
