these taste spectacular. not too overpowering. i love coconut the stronger the better- but my husband doesn't. this works as a nice compromise Ingredients:
1 tablespoon lime juice |
1 tablespoon green hot pepper sauce |
1 (14 ounce) can light coconut milk |
4 boneless skinless chicken breasts |
3/4 cup panko breadcrumbs |
1/2 cup flaked coconut |
1/2 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. pierce chicken breasts all over with a fork. marinate chicken in 1st 3 ingredients for at least one hour in the fridge. 2. in shallow dish combine panko, coconut, salt and pepper. coat chicken with panko mixture. 3. place chicken on baking sheet lined with parchment paper. b. 4. ake at 400 degrees for 30 minutes. turn chicken and bake an additional 30 minute. |
