A great tasting way with chicken...crunchy and sweetened with coconut. From Cooking With Aloha cookbook. Ingredients:
3 1/2 cups sweetened flaked coconut |
2 lbs boneless chicken, cut into 1-inch pieces |
2 teaspoons ground cumin |
3/4 teaspoon coriander |
1/2 teaspoon cayenne pepper |
sea salt & fresh ground pepper |
2 eggs, beaten |
Directions:
1. Preheat oven to 325 degrees. 2. Bake coconut on a tray until golden, stirring frequently, about 15 minutes. 3. Transfer to a bowl and cool. 4. Coarsly grind in a food processor and place on a large plate. 5. Spray large baking tray with cooking oil. 6. In a bowl, combine cumin, coriander cayenne, salt and pepper. Add chicken pieces, turning to coat. 7. Dip into egg mixture, and coat with coconut. 8. Place tray in fridge for 1 hour. 9. Heat oven to 400 degrees. Bake chicken until crisp, about 15 min., turning over once. |
