This a fun and easy recipe to make. It's unique flavors bring an exotic taste to the table without frightening people away. It is traditionally served over rice or cous cous, but when I make it for my boyfriend I serve it over soba noodles. Ingredients:
4 boneless skinless chicken breasts |
salt and pepper |
2 tbsp. vegetable oil |
1 onion, chopped |
1 red bell pepper, chopped |
1 green bell pepper, chopped |
2 garlic cloves, minced |
1 can coconut milk |
1/2 tsp. crushed red pepper flakes (add more to spice up the dish) |
Directions:
1. Sprinkle chicken breasts with salt and pepper 2. Heat oil in a large skillet, lightly brown the chicken on both sides, about 3-5 minutes per side 3. Remove chicken breasts and setaside 4. In the same skillte, saute onions, bell peppers, and garlic, about 5-8 minutes 5. Stir in coconut milk and red pepper flakes 6. Simmer for 5 mintues over a medium heat 7. Return chicken to pan, spoon sauce and vegetables over chicken 8. continue to cook, uncovered, for 20-30 minutes until chicken is cooked through and vegetables are tender 9. Serve over rice, cous cous, or noodles to soak up the sauce 10. Top with crisp shallots, if desired |
