Wonderful coconut cheesecake that I got from a friend a long time ago. She is a great cook. Ingredients:

Directions:
1. Mix 3/4 c graham cracker crumbs ,1 Tbs sugar and 2 Tbs melted butter together. Sprinkle on sides and press in boottom of greased 9 spring -form pan. 2. Cook and stir coconut cream pudding and pie filling with 1/2 c sugar and 1 c milk;bring to full boil. Cover pudding surface. 3. Beat 1-1/2 lbs cream cheese and beat in 3 egg yolks,1 Tbs lemon juice,1 tsp vanilla,1/4 tsp salt and pudding. 4. Beat 3 egg whites to peaks;fold in. Pour into prepared pan. 5. Bake at 425 for 30 mins. until set in center. Cool. |
