Coconut-cardamom Tapioca With Golden Raisins |

Coconut tapioca, golden raisins with a touch of cardamom. Ingredients:
1/3 cup sugar |
3 tbsp minute tapioca |
1 14 oz can coconut milk |
1 cup milk |
1 egg, well beaten |
1/2 tsp ground cardamom* (or more, to taste) |
1 tsp vanilla |
Directions:
1. Mix sugar, tapioca, coconut milk, milk, raisins and egg in medium saucepan; let stand 5 minutes (DON'T skip this step). 2. Cook on medium heat, stirring constantly, until mixture comes to a FULL boil (a boil that doesn't stop bubbling when stirred. This will take longer than you really think it should. DON'T try to speed it up by turning the heat to high.) Remove from heat; stir in cardamom and vanilla. 3. Cool 20 minutes, then serve warm or refrigerate to serve cold. Yum! |
