after dinner candy Ingredients:
28 caramels |
1/4 cup butter or margarine |
2 tablespoons half-and-half cream |
1-1/2 cups confectioner's sugar |
1 cup salted peanuts |
2 cups marshmallows |
1 to 2 cups flaked coconut |
Directions:
1. Place caramels, butter, and cream in a 2 qt. microwave-safe dish 2. Microwave,uncovered,on medium for 2 minutes;stir 3. Microwave 1-3 minutes more, stirring every minute, until smooth. 4. Stir in sugar until smooth. 5. Add peanuts. 6. Gently fold in marshmallows. 7. Sprinkle coconut in a 10 in.x 5 in. strip onto two sheets of waxed paper 8. Spoon caramel mixture down the center of coconut. 9. Using the waxed paper, coat caramel with coconut and roll into two 10 in. logs. 10. Discard wax paper 11. Wrap logs in plastic wrap and chill for 4 hours. 12. Remove plastic wrap 13. Cut logs into 1/2 in. slices. 14. Store in an airtight container in the refrigerator 15. Yield: about 4 dozen |
