I really don't know how many people this will serve.. the recipe makes about 2.5 pounds of candy... this has a LOT of coconut in it..!!! the recipe is from: recipes from the great midwest.. Ingredients:
2 cups superfine white sugar |
1 1/2 cups light corn syrup |
2 tbsp. water |
6 cups shredded coconut |
2 tbsp. whipped cream |
1 tbsp. butter |
Directions:
1. line a 13 x 9 inch bakinging pan with foil, extending foil over the edges of pan. 2. butter foil ; set aside 3. In a heavy large saucepan or Dutch oven; combine sugar, corn syrup, and water. 4. cook and stir over medium heat until the sugar dissolves and the mixture starts to boil 5. stir in coconut. 6. clip a candy thermometer to the side of the pan 7. cook over medium high heat until the mixture reaches 238'F 8. coconut should be lightly golden 9. stir in cream 10. continue cooking till mixture again reaches 238'F 11. stir in butter 12. pour into prepared pan. cool slightly 13. fluff with a fork... cool ... cut candy into squares 14. wrap in waxed paper.... DO NOT stack the candy |
