Coconut Cake In Orange Pool |

Specially for coconut lovers . This is a very soft moist cake . Add some Lemon / orange essence if desired and Adjust the sugar according to your taste . Ingredients:
250 g butter |
1 2/3 self raising flour , sifted |
1 3/4 c caster sugar |
7 eggs , beaten lightly |
4 c desiccated coconut |
lemon/orange pool |
2 c caster sugar |
1/2 c lemon/orange juice |
2 tsp finely grated lemon/orange rind |
decoration |
1 small lemon/orange , finely sliced |
icing sugar for dusting |
Directions:
1. Pre heat oven to 170 deg . 2. Grease a 26 cm pan . 3. Beat the butter and sugar until light and fluffy . 4. Add eggs one by one and beat . 5. Gently fold the flour and coconut . 6. Bake until firm . 7. Will take more than an hour 8. ........................................................... 9. Dissolve over low heat the Lemon/Orange rind and juice , sugar and water . 10. Boil for 10 mins without stirring until thickens abit . 11. Keep aside abit of syrup and pour the remaining over the cake . 12. .............................................................. 13. Boil the finely sliced Lemon/Orange over low heat for 5 mins . 14. Decorate the cake with it and dust with icing sugar 15. ................................................................ |
