Great snack cake that is a guilt-free delight,thanks to lite coconut milk and fat-free egg whites Ingredients:
1 pkg(18.25oz) white cake mix |
1 can(13.5oz) lite coconut milk |
2 egg whites |
2tsp coconut extract |
2c thawed frozen lite whipped topping |
1/4c sweetened flaked coconut |
kiwi and orange slices,optional |
Directions:
1. Preheat oven to 350. Line a 9x13 baking pan with foil;coat with cooking spray. On high speed,beat cake mix,coconut milk,egg whites and extract till thickened and fluffy,1 min. Spread in pan. Bake 30-35 mins or till toohpick inserted into the center comes out clean. Cool on rack 30 mins. Transfer from pan to rack;remove foil;cool. Spread with topping;sprinkle with coconut. If desired,garnish with fruit. |
