One of my mother's recipes. I have expanded upon her original directions, based on years of baking with her.
Ingredients:
1 cup butter
1 1/2 cup sugar
3 eggs, separated
1 cup coconut (packed)
3 cups flour, sifted
1/2 tsp baking soda
2 tsp baking powder
1 cup orange juice
Directions:
1. Cream together butter and sugar.
2. Add egg yolks one at a time.
3. Sift together flour, soda and baking powder and stir in coconut.
4. Add dry mixture alternately with orange juice, blending well after each addition. Beat until well mixed but do not overbeat.
5. Beat egg whites until stiff and fold into batter.
6. Pour into 3 greased and floured 9 inch layer pans and bake in preheated 325 oven for about 45 minutes or until toothpick inserted near center comes out clean.
7. Cool layers, then frost with your favorite frosting.
8. Also good baked in a bundt or tube pan then frosted or glazed. Will require additional baking time.
