We don't eat grains or refined sugar, so I'm always on the lookout for tasty homemade treats with top notch ingredients. I came up with this recipe after finding that organic dessicated coconut (no sweetener added) was affordable! I started with the idea of a pie crust recipe I had from someone else and evolved it into these brownies. Preparation time includes the stewing of the dates. Ingredients:
120 g dates |
100 ml water |
2 eggs |
150 g coconut |
80 g almonds, chopped |
30 g cocoa powder |
Directions:
1. Preheat the oven to 175°C / 350°F. 2. Place dates and water in a saucepan and leave them to gently warm until the dates are soft and some water is absorbed. 3. In a mixing bowl, beat the eggs, then add the dry ingredients. Stir to combine. 4. Press the dates and water through a strainer, or process the dates until smooth, and add to the mixture. 5. Stir until well combined. 6. Press into a small baking dish and bake for 15 minutes. |
