If eggs and fats are no-no's for you, then try this. I think you'll like it. I seem to have had this recipe forever, don't know where it came from. Ingredients:
5 ounces desiccated coconut |
14 ounces flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
3/4 pint milk |
10 ounces caster sugar (fine sugar) |
1/4 teaspoon cinnamon |
1/4 teaspoon ground cloves |
Directions:
1. Mix the coconut and the milk and leave to soak for 30 minutes. 2. Sift the flour, baking powder, cloves, cinnamon and salt into a bowl. 3. Stir in the sugar. 4. Add the coconut and milk and mix to make a soft batter. 5. Pour into a greased 3lb. loaf tin. 6. Smooth the top and bake for 1 1/4 to 1 1/2 hours at 350 degrees F. |
