This bread is very popular in Barbados and can be served with afternoon tea. Ingredients:

- 1 kg (2 1/4 lb.) flour |
- 2 tsp. instant yeast or baking powder |
- a small pinch of salt |
- 500 ml (2 cups) grated coconut |
- 200 ml (3/4 cup) sugar + 4 tbsp. for sprinkling |
- 1 tsp. vanilla extract |
- 1 egg |
- 250 ml (1 cup) milk |
Directions:
1. Method 2. combine the flour, baking powder and salt; add the coconut, sugar, vanilla and eggs and mix well; 3. gradually add the milk, mixing to form a firm but not sticky dough; 4. knead for a few minutes; form into 2 loaves and place into greased bread pans; 5. sprinkle the tops with a little sugar and 6. bake in a 180° F (350° F) oven for about 1 hour or until golden brown; 7. serve warm or cold. |
