A yummy sweet savory bread/cake treat, great when you accompany it with your favorite cup of coffee.. You can bake in either a cake pan or bread pan. It takes about 45-50 minutes to bake, this makes about 2 full size loaves, and 4 small ones. Ingredients:
2 cups sugar |
1 cup oil |
2 teaspoons coconut extract |
4 eggs |
1 cup buttermilk |
3 cups flour |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1/2 teaspoon baking powder |
1 cup , shaved nuts make sure they are shaved (your preferance, walnuts, almond...) |
1 cup coconut flakes |
glaze |
1 cup sugar |
1/2 cup water |
2 tablespoons butter |
1 teaspoon coconut extract |
Directions:
1. Mix all ingredients together except for coconut flakes and nuts. 2. After mixing ingredients gradually add coconut flakes and nuts. 3. Bake at 325 for 45-50 minutes. 4. Glaze. 5. Add all ingredients into a small pot and let it boil for 10 minutes, it should become a 'syrupy' consistency. 6. Poke holes in loaves and pour glaze over your delicious coconut bread. 7. let glaze solidify and Enjoy! |
