Moist Coconut Bread
Ingredients:
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups sugar
1 cup vegetable oil
4 eggs, beaten
2 teaspoons vanilla
1 cup buttermilk
1 1/2 cups coconut, shredded
1 cup walnuts, chopped
Directions:
1. Combine flour, bak ing powder, soda, and salt. Set aside. In a large bowl, combine sugar, oil, eggs, and vanilla.
2. Add dry ingredients alternately with buttermilk.
3. Stir just until moistened.
4. Fold in coconuts and walnuts.
5. Pour into three PAM sprayed small loaf pans.
6. Bake in preheated 300 degree oven on lowest rack for about 30-35 minutes or until toothpick comes out clean.
