This has the consistency of a tartar sauce and would be a great dip for crab cakes or spicy grilled shrimp or fish. Ingredients:
1 cup light mayonnaise |
1/2 cup unsweetened dried shredded coconut |
1 tablespoon lime juice |
1 tablespoon basil, chopped |
1 teaspoon garlic and red chile paste |
salt and pepper |
Directions:
1. Mix all ingredients until smooth. May be prepared a day ahead. Bring to room temperature before serving. |
