This was a christmas treat my mom would make for us - growing up in canada the winters always seemed so long and this sweet treat was so much like comfort food Ingredients:
1/2 cup milk |
1/2 cup butter |
1 cup brown sugar |
2 cups oatmeal |
1 cup coconut |
1 tsp vanilla |
1 tsp salt |
Directions:
1. Mix first 3 ingredients and bring to a boil until it bubbles, then remove from heat. Mix in the remaining ingredients. 2. Press into an 8 x8 pan and cool until firm. Cut into bars approx. 1 x1 pieces. 3. Heat 8 oz. of chocolate chips. Dip bars into chocolate and cool. The original recipe as written by my mother included 1/2 bar of paraffin wax with the chocolate chips - I make it without the paraffin - I think the only change is the firmness of the chocolate. |
