Sweet and chewy , this recipe is so simple and very easy to make . For variation , just omit the food color and dip the white coconut barfis in Bitter sweet chocolate glaze and leave it on a rack to set . Ingredients:
2 c white granulated sugar |
3/4 c water |
1 1/2 c fresh shredded coconut |
1 tablespoon ghee (clarified butter) |
1/2 teaspoon vanilla extract |
2 cardamom pods, seeds finely powdered |
few drops of food colouring of your choice |
Directions:
1. Add the sugar and water and cardamom pwd to a heavy, large saucepan. 2. Cook the sugar in medium heat slightly golden colored . 3. May take 15 to 20 mins . 4. As soon as the sugar syrup reaches the right consistency, quickly add the shredded coconut . 5. Stir the coconut and syrup mixture over medium heat until the mixture thickens abit and leaves the sides of the pan 6. Stir in the ghee and food colour . 7. Remove when you can see the bottom of the saucepan as you drag the spoon across it . 8. Pour into a greased tray and spreading it evenly with a spatula .. Allow to cool for few mins and cut the burfi into squares or the shape u desire . 9. Do not fully cut through. 10. Allow it to cool awhile and turn it out onto a board and cut through it . |
