Coconut Banana Bread With Lime Glaze |

Ingredients:
2 cups flour |
3/4 tsp baking soda |
1/2 tsp salt |
1 cup sugar |
1/4 cup butter, softened |
2 large eggs |
3 ripe bananas, mashed |
1/4 cup plain yogurt |
3 tbsp dark rum |
1/2 tsp vanilla |
1/2 cup flaked coconut |
cooking spray |
1 tbsp flaked coconut |
1/2 cup powdered sugar |
1 1/2 tbsp lime juice |
Directions:
1. Preheat oven to 350 2. Combine flour, soda, salt. 3. Cream butter and sugar, add eggs one at a time. Beat well. 4. Add bananas, yogurt, rum and vanilla. Beat well. 5. Add flour mixture, beat at low spead until just moist. 6. Stir in 1/2 cup coconut. 7. Spoon batter into greased loaf pan. Sprinkle with 1 tbsp coconut. 8. Bake 1 hour or until a wooden pick inserted in center comes out clean. 9. Cool in pan 10 minutes. Remove from pan. 10. Combine powdered sugar and juice, stirring with a whisk; drizzle over warm bread. 11. Enjoy! |
