Last of my banana bread bonanzas: organic coconut oil, sweetened shredded coconut and walnuts add such great flavor to this banana loaf! Ingredients:
1/2 cup organic coconut oil ( liguidfy if hardened ) |
1 cup granulated sugar ( brown is a nice alternative also ) |
2 eggs |
1 tsp vanilla extract or 1 tsp black walnut or almond flavor ) |
2 cups flour |
2 tsp baking powder |
1/4 teaspoon salt |
3 large bananas, mashed to a puree |
1 cup sweetened flaked coconut |
1 cup chopped nuts ( macadamia, walnuts , almonds etc ) |
Directions:
1. place wet ingredients in a bowl 2. Combine dry ingredients together 3. Beat both ingredients until smooth and blended 4. Stiri n the coconut and nuts 5. Place in a greased and floured 9 x 5 pan 6. Bake 350F about an hour or tested done in center with wooden toothpick 7. Wrap and slice the following day |
