This is a Everyday Food recipe that has been become a favorite of mine. It makes a very tender, not-overly-sweet, subtle coconut-flavored sweet treat. The rolling of the hot cookie in confectioners' sugar gives the cookie a nice little glaze. Read more . **NOTE: I always roll them in the confectioners' sugar again after they're cooled to give them a powdery white coating. I make them several times a year and always include them in my Christmas cookie gifts. Enjoy... Ingredients:
2 sticks unsalted butter, softened |
1/4 cup confectioner's sugar, plus more for dusting |
2 cups all-purpose flour |
1/4 teaspoon salt |
2 cups sweetened flaked coconut |
Directions:
1. Preheat oven to 350 degrees. 2. In the bowl of an electric mixer, cream butter with 1/4 cup confectioners' sugar until fluffy. 3. Mix in flour and salt until they're just combined. 4. Stir in coconut. 5. Roll dough into 1-inch balls; place 2 inches apart on a baking sheet. 6. Bake until just starting to brown, 15 to 20 minutes. 7. Roll the warm cookies in confectioners' sugar; let cool completely. 8. NOTE: I rolled them in confectioners' sugar a second time after they're cool to give them a nice powdery coating. 9. Makes 36 cookies. |
