Coconut Apple Avocado Salad |

Apples and avocados are combined with yogurt and honey and then sprinkled with coconut, slivered almonds, and blueberries for a refreshing snack. Ingredients:
2 small red delicious apples, cored and diced |
1 avocado - peeled, pitted and diced |
1 cup flaked coconut |
1/2 cup slivered almonds |
3 tablespoons nonfat vanilla yogurt |
3 tablespoons honey |
1 cup fresh blueberries |
Directions:
1. Toss together the apple, avocado, coconut and almonds in a bowl. Stir together the yogurt and honey in a separate bowl; pour over the apple mixture and stir to coat. Add the blueberries and mix to combine. |
