We love yams or sweet potatoes just baked and scooped out. This adds a bit of a fancier touch and a sweetness as well. Ingredients:
4 medium yams |
1/2 cup shredded coconut |
1/2 cup chopped pecans |
1-2 tbsp maple syrup |
1 tbsp fresh ginger, grated |
1/2 cup coconut milk |
Directions:
1. Wash the yams and pierce them, then cook in the microwave on high for 10-12 minutes or using the potato setting. 2. Cool until you can handle them. 3. Scoop out the insides and discard the skins 4. Mix in coconut, coconut milk, maple syrup and ginger. 5. Top with pecans. 6. Bake at 350 F for 30 minutes. |
