A MINT FILLING BETWEEN COCOA COOKIES.... Ingredients:
1/3 cup butter or margarine |
1/3 cup shortening |
1 cup white sugar |
1 egg |
1- 1/2 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
3/4 cup cocoa |
1/4 cup milk |
2 cups sifted flour |
************ for filling |
3 cups powdered sugar 1/4 teaspoon mint extract |
4 drops of green food colcoring |
3 to 4 tablespoons of cream |
1/4 teaspoon salt |
mix all together for filling between cookies |
Directions:
1. CREAM TOGETHER BUTTER, SHORTENING AND SUGAR UNTIL LIGHT AND FLUFFY. 2. BEAT IN EGG. 3. STIR IN DRY INGREDIENTS ALTERNATELY WITH MILK. 4. FORM IN 4 ROLLS, 1 INCH DIAMETER. 5. CHILL UNTIL FIRM ENOUGH TO SLICE EASILY. 6. CUT INTO 1/8 INCH SLICES. 7. BAKE AT 350 DEGREES F. ABOUT 10 MINUTES. 8. PUT COOKIES TOGETHER WITH MINT FILLING |
