A lower cal, higher protein cheesecake. Ingredients:
10 vanilla wafer cookies |
1 tablespoon cocoa powder |
1 tablespoon butter, melted |
1 3/4 cups cottage cheese |
1/3 cup cocoa powder |
1/2 cup sugar |
1 (1 ounce) envelope unflavored gelatin |
1/2 cup milk |
1 teaspoon vanilla extract |
Directions:
1. Heat oven to 350°F. 2. Stir together finely crushed vanilla wafer cookies, 1 Tbsp cocoa powder and 1 Tbsp melted butter. 3. Press onto bottom of 8-inch springform pan. 4. Bake 5 minutes or until set. Cool completely on wire rack. 5. Place cottage cheese in a food processor or blender; process until smooth. 6. Stir together cocoa, sugar and gelatin in saucepan; stir in 1/2 cup milk. 7. Let stand 5 minutes to soften gelatin. Cook over medium heat, stirring constantly, until gelatin is completely dissolved; remove from heat. 8. Add gelatin mixture and vanilla to cottage cheese in food processor; blend well. 9. Pour onto crust and refrigerate for 4 hours. |
