I love this tender cake because I usually have the ingredients on hand and it mixes up in a jiffy, relates Ellen Champagne of New Orleans, Louisiana. The rich fudge frosting is easy to prepare, and the chopped pecans add nice crunch. Ingredients:
1 package white cake mix (regular size) |
1 cup cola |
2 eggs |
1/2 cup buttermilk |
1/2 cup butter, melted |
1/4 cup baking cocoa |
1 teaspoon vanilla extract |
1-1/2 cups miniature marshmallows |
fudge frosting: |
1/4 cup baking cocoa |
1/2 cup butter, cubed |
1/3 cup cola |
4 cups confectioners' sugar |
1 cup chopped pecans, toasted |
Directions:
1. In a large bowl, combine the first seven ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in marshmallows. 2. Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack for 15 minutes. 3. Meanwhile, for frosting, combine cocoa and butter in a small saucepan. Cook over low heat until butter is melted. Stir in cola until blended. Bring to a boil, stirring constantly. Remove from the heat; stir in confectioners' sugar until smooth. Fold in pecans. Spread over cake. Let stand for 20 minutes before cutting. Yield: 12-15 servings. |
