Coco Rice With Green Onions |

Unsweetened coconut can be found in most Asian stores. I find it in our stores here in Iowa around the hoildays. Ingredients:
2 teaspoons canola oil or 2 teaspoons olive oil |
1 cup yellow onion, chopped |
1 cup basmati rice |
1/4 teaspoon ground turmeric |
1/4 cup unsweetened flaked coconut |
1 1/2 cups reduced-sodium fat-free chicken broth |
1/2 cup water |
1/4 teaspoon kosher salt |
1/8 teaspoon fresh ground black pepper |
1/4 cup green onion, chopped |
Directions:
1. Heat oil in a medium saucepan over medium-high heat. 2. Add onion; saute 2 minutes or until tender, stirring constantly. 3. Add rice and turmeric; saute until rice becomes yellow. 4. Stir in unsweetened coconut. 5. Add broth and 1/2 cup water; bring to a boil. Reduce heat to low and season with salt and pepper. 6. Cover and simmer 20 minutes or until tender. 7. Turn off heat, uncover, and let stand 5 minutes. 8. Fluff with a fork. 9. Stir in green onions and serve. |
