An easy recipe from a card found in the supermarket. Suggested side - citrus rice and parsley and orange wheel garnish. Ingredients:
4 boneless skinless chicken breast halves |
1 tablespoon cornstarch |
2 tablespoons lemon juice |
2 1/2 cups dark sweet cherries, pitted |
1/3 cup flour |
1/2 ground cinnamon |
1/2 ground allspice |
1/2 cup water |
1/4 cup coconut, shredded & toasted |
Directions:
1. Stir together cornstarch and lemon juice; stir in cherries. 2. Combine flour and spices in a bag; add chicken and shake to coat. 3. Brown chicken over medium-high heat in skillet sprayed with nonstick cooking spray. 4. Add water, reduce heat; cover and simmer about 20 minutes or until chicken is tender. Remove chicken from pan and cover with foil. 5. Remove all but 1 tbsp drippings from pan; add cherry mixture and bring to a boil. Cook until sauce thickens. Place chicken onto serving plates, pour cheery sauce over chicken and top with coconut. |
