1 cup water |
3/4 cup white vinegar |
2 tablespoons sugar |
1 teaspoon salt |
5 medium carrots, peeled and cut into 4-inch lengths |
1 large garlic clove |
1/4 teaspoon chili flakes |
1/4 teaspoon dried oregano |
Directions:
1. 1. To make brine, bring water, vinegar, sugar and salt to a simmer. 2. 2. Remove from heat. 3. 3. Place garlic, chili flakes, oregano and carrots into a jar. 4. 4. Cover with hot brine. 5. 5. Cover and let cool at room temperature for about an hour, then refrigerate for at least 2 hours. |
