Ingredients:
1 cup water
3/4 cup white vinegar
2 tablespoons sugar
1 teaspoon salt
5 medium carrots, peeled and cut into 4-inch lengths
1 large garlic clove
1/4 teaspoon chili flakes
1/4 teaspoon dried oregano
Directions:
1. 1. To make brine, bring water, vinegar, sugar and salt to a simmer.
2. 2. Remove from heat.
3. 3. Place garlic, chili flakes, oregano and carrots into a jar.
4. 4. Cover with hot brine.
5. 5. Cover and let cool at room temperature for about an hour, then refrigerate for at least 2 hours.
